Rosemary Eggs in a Bird's Nest

This morning, as I was making my lunch, I thought to myself, hmmm what should I do with this slice of ciabatta bread from my sandwich roll (obviously, too much bread will take away from the sammich...), so I thought...hmmm delicious eggs and ciabatta bread...rosemary...ham...truffle oil...mmmmm

So I started with the rosemary and ham (but we had a small dilemma with the ham--totally overcooked it) and some cooking spray, cooked it in a pan to add some flavor...then added more rosemary (fresh from the garden, mind you) and a tiny bit of truffle oil. Put the slice of ciabatta bread (sans a small hole cut out with the top for the cooking spray...) into pan....crack egg into hole. Cook. Flip. Set on plate. Make new ham. Top "nest" with ham. Garnish with rosemary. Drizzle with truffle oil. Eggs a la Chrissy...Happiness.
