Balsamic Portobello and Raspberry Bellavitano Scramble

I think the name says, well, most of it. Yum! This morning I glazed a sliced Portobello in balsamic vinegar and a little sugar, added 2 egg whites, and some freshly grated raspberry Bellavitano (a delightful conglomerate of Parmesan and cheddar cheese) for a really tasty scramble.

Things that I think I might change next time around:

1. I didn't drain off the balsamic from the mushrooms, leaving a little excess liquid in my eggs
2. I would probably use 3 egg whites with the amount of mushroom and cheese in the scramble
3. I would maybe add some fresh basil as a garnish...
